Recipe 1: Cantonese Classic — Pork Bone with Lotus Root & Peanut Soup (莲藕花生猪骨汤)

Ingredients (serves 4):
- 500g pork neck bones (blanched)
- 2 sections lotus root, peeled and sliced
- 100g raw peanuts, soaked 1 hour
- 3 red dates
- 2 slices fresh ginger
- 1 dried cuttlefish, optional
- 2 liters water
- Salt, to serve
Method (Electric Stew Pot):
- Blanch pork bones in boiling water for 3 minutes. Rinse.
- Load all ingredients into the ceramic pot. Cover with water.
- Set to High for 1 hour, then Low for 3 hours.
- Add salt only when serving.
Why it works: Lotus root becomes crisp-tender, peanuts add creamy sweetness, and pork bones release gelatin for a silky broth.
Recipe 2: French Classic — Pot-au-Feu
The national dish of French home cooking. One pot, two courses.
Ingredients (serves 6):
- 1.5 kg beef brisket or chuck
- 4 marrow bones
- 4 leeks, trimmed
- 4 carrots, peeled
- 4 turnips, peeled
- 2 onions, studded with cloves
- 1 bouquet garni
- Coarse sea salt, cornichons, Dijon mustard, to serve
Method (Electric Stew Pot):
- Place beef and marrow bones in the pot. Cover with cold water.
- Bring to High for 30 minutes. Skim foam from the surface.
- Add onions, bouquet garni, and a pinch of salt.
- Switch to Low for 5 hours.
- In the last hour, add carrots, leeks, and turnips.
- Serve broth first, then meat and vegetables with salt, cornichons, and mustard.
Why it works: Long gentle heat dissolves collagen into gelatin while keeping the meat tender and the broth clear.
Recipe 3: Chinese-Western Fusion Bone Broth
This recipe borrows from both traditions: Cantonese herb logic and the roasted-bone depth of Western stock.
Ingredients (serves 4):
- 1 kg beef marrow bones, roasted at 200°C for 30 minutes
- 2 carrots, rough-chopped
- 2 celery stalks, rough-chopped
- 1 onion, quartered
- 5 slices fresh ginger
- 10 goji berries
- 3 red dates
- 1 tablespoon black vinegar
- 3 liters water
Method:
- Roast bones until deeply browned.
- Load everything into the electric stew pot.
- Set to High for 2 hours, then Low for 6 hours.
- Strain. The broth should be rich, gelatinous, and golden.
- Sip as a tonic or use as a base for risotto or noodle soup.
